Opening in 2022, Mrs. Ding restaurant is new to the Sydney suburb of Botany, but brings with it a lifetime’s experience of Hunan cuisine. Over more than a decade overseeing the acclaimed Chairman restaurant, now located in Darlinghurst, our head chef, Mrs Ding, has established an enviable reputation for her authentic and generous Hunan-style cooking.
Mrs Ding learnt to cook authentic Hunan cuisine using traditional techniques and recipes taught to her by her mother and her grandmother. Today, you can taste the tradition in every dish, passed down the generations, and from our family to yours.
Mrs Ding believes in generosity of both spirit and portions! Made with lots of love and fond memories of the food she grew up eating in her childhood home in Hunan, Mrs Ding’s delicious dishes nourish and warm the body and soul.
Over many years, Mrs Ding has perfected her culinary techniques, cooking for customers, friends and, of course, family. Now, you can enjoy her fresh, spicy and mouth watering dishes cooked in the traditional Hunan style.
Our restaurant takes its name from our wonderful head chef and co-proprietor, Mrs Ding.
Born and raised in Hunan, Mrs Ding learnt her cooking techniques and traditional recipes from her mother and grandmother. In her move to Australia, her cooking lost none of its authenticity: the generous home-style dishes she cooks are pure Hunan cuisine to nourish the body and soul.
Paying homage to Hunan’s unique food tradition every time she steps into her kitchen, Mrs Ding’s family-style signature dishes include Chairman Mao’s favourite braised pork, pepper chili mud crab and house-smoked meats, among many others.
Renowned for its hot, sour and spicy flavours, Hunan – also known as Xiang – cooking is one of the Eight Great Traditions of Chinese cuisine.
It is unique in China due to the mountainous geography of the Hunan region, which historically made it difficult to access and therefore less open to influence from the food of neighbouring provinces.
Using premium quality ingredients, and a range of cooking techniques, including pot-roasting, slow cooking and smoking, Mrs Ding prepares authentic, home-style Hunan dishes bursting with robust flavours, deep colours and fresh aromas.
